Game On Enterprises is a business that evolved from our original venture of running bush cooking, camping, and harvesting tours in the Australian bush. This soon expanded into BBQ Rubs driven by the increasing demand and interest from customers who participated in our bush tours and wanted to recreate similar culinary experiences at home.

Hot and Fast barbecuing is a fantastic technique to quickly cook meats with a juicy interior, a smoky flavor, and a nice sear on the outside. It's a favorite among many BBQ enthusiasts for its speed and delicious results.

Hot and Fast barbecuing is a fantastic technique to quickly cook meats with a juicy interior, a smoky flavor, and a nice sear on the outside. It's a favorite among many BBQ enthusiasts for its speed and delicious results.
Searing: The high heat helps to quickly sear the outside of the meat, creating a flavorful crust or grill marks. This sear locks in the juices and adds a delicious charred flavor.
Juiciness: Because the cooking time is shorter, there is less opportunity for the meat to dry out. This method is excellent for keeping meats juicy and tender on the inside.
Smoky Flavor: The short cooking time over high heat still allows for the absorption of smoky flavors from the barbecue or grill, enhancing the overall taste of the meat.
Quick Cooking: Hot and fast barbecuing is great for thinner cuts of meat like steaks, burgers, chicken breasts, and some seafood. It's a time-efficient method that's perfect for weeknight dinners.

For larger, thicker cuts of meat, especially those with a significant amount of connective tissue like brisket, pork shoulder, and ribs, a low and slow cooking method is typically the preferred approach. Here's why:

For larger, thicker cuts of meat, especially those with a significant amount of connective tissue like brisket, pork shoulder, and ribs, a low and slow cooking method is typically the preferred approach. Here's why:
Tenderization: Low and slow cooking involves using lower temperatures (often between 225°F and 275°F or 107°C to 135°C) and longer cooking times. This allows the collagen in the connective tissues to slowly break down and convert into gelatin, which makes the meat tender and succulent.
Flavor Infusion: The extended cooking time at lower temperatures allows the meat to absorb the smoky flavors from the wood or charcoal more thoroughly. This results in a deep, smoky flavor profile that's characteristic of traditional barbecue.
Consistency: Low and slow cooking provides more consistent results, ensuring that the interior of the meat is cooked evenly without drying out or becoming tough.
Large Cuts: Larger cuts of meat, such as whole briskets or pork shoulders, can benefit greatly from low and slow cooking because it gives them the time needed to reach the desired level of tenderness and flavor.
Bark Formation: During low and slow cooking, a flavorful crust known as the "bark" can develop on the exterior of the meat, adding texture and intense flavor.

Why we love cooking Asado style: Asado tastes so good because it combines high-quality meat, slow and skillful cooking, Game On Rub seasonings , and the influence of wood or charcoal smoke, and the social and cultural elements that make it more than just a meal. It's a harmonious blend,
is renowned for its delicious and flavorful results. Several factors contribute to why asado tastes so good:
High-Quality Meat: The foundation of any great asado is high-quality meat.
Slow Cooking: Cooked slowly over an open flame or charcoal grill. This slow and gentle cooking process allows the meat to render its fat slowly and develop a smoky, charred crust. And a delicious smoky flavour to your meat. The extended cooking time ensures that the meat remains juicy and tender, making it incredibly flavourful.
Game On Rubs Seasoning
Grill Grates: The grill grates used in asado grills, known as "parrillas," are typically made of metal rods or bars. This allows the meat to come into direct contact with the flames and develop a beautiful sear and char, enhancing the flavor.
Skill and Technique: Preparing an excellent asado requires skill and technique. Knowing when to flip the meat, adjusting the distance from the flames, and monitoring the cooking time are all essential aspects. Experienced grill masters can fine-tune the process to achieve the perfect level of doneness for each cut of meat.
